I am so excited! It looks and feels like fall has officially shown up:) Well, at least where I live. I love watching the leaves start to turn and change color before they fall, the beautiful sunsets, and cooler days and nights. I will admit though that I am not a fan of the shorter days. As a late riser and night owl, it means I have to get my butt up earlier to get the most out of the daylight. At least now with the cooler weather I don’t have to sweat to death to have the oven on during the day! And that is why I am sharing my super delish and easy homemade banana bread recipe!

Who Doesn’t Love Homemade Banana Bread?

Are you a banana bread fan? I don’t think I’ve ever had banana bread I didn’t like. When my boys were much younger I used to spend a fair amount of time baking. I really enjoyed the process and the enjoyment when my treats were consumed.

Years ago I stumbled upon this easy banana bread recipe and have used it many times over. I have no idea where I got it from. It’s been written on a piece of paper in my notebook forever and it is so simple, quick, and easy to make. Who doesn’t have brown, over ripe bananas that pile up on your counter no one wants to eat? I do, and often! So, let’s use them up and bake some tasty bread:)

 

Banana Bread Mix Recipe

Here are the ingredients that you will need:

  • 3 bananas (brown, mashed)
  • 1/3 cup melted butter
  • 1/2 to 1 cup sugar (depends on how sweet you want it)
  • 1 egg whisked with a fork
  • 1 tsp vanilla
  • 1 tsp baking soda
  • Pinch of salt
  • 1/2 cups flour

I also add a decent sprinkle of cinnamon when mixing the batter.

Here are the directions:

  1. Preheat oven to 350.
  2. In a bowl, mix all ingredients by hand until well incorporated (I just use a spatula).
  3. Pour into a greased bread pan approximately 9x4x4. I usually use a spray like PAM.
  4. Bake 50 minutes to 1 hour or until browned and a toothpick inserted in the middle comes out clean. I would check it at 50 minutes.
  5. Cool on a cooling rack. I try to let it cool for at least 15 minutes or more before getting out of pan.

Banana Bread Toppings and Variations

So there you have it! I always add in butterscotch chips. I have been known to forget and have the batter already in the pan. When that happens, I just put the chips on top and use a knife to swirl them in.

Really, you can add any banana bread toppings you want. Chocolate chips or chunks of chocolate are great homemade banana bread recipe add-ins or banana bread toppings. You can also add 1 cup of other flavored chips (butterscotch, peanut butter, vanilla). It is recommended cutting the sugar down to 1/2 – 3/4 cups if adding chips in.

Other add-ins could include things like walnuts and berries.

Easy Homemade Banana Bread Recipe

This super simple banana bread recipe takes just a few minutes to mix and pop in the oven. It is great at the last minute for a delish bread to gift or even take to work for a treat!

Since it is one of my tried and true recipes, I even use it during the holidays to slice up and put on my holiday trays for friends and neighbors. Enjoy the leaves changing and the temps cooling while you bake up some yummy banana bread!
